As I’ve lost so much weight recreating my own cuisine by altering barely noticeable differences this dish was absolutely amazing and I almost wanted to over indulge. I did NOT. LOL. This dish was chili verde chicken and saffron rice mixed with diced veggies. Awwwww so good and good for you ! Everything in moderation. Even moderation in moderation!!
My teenage son calls me a ” cocky ” chef! I’d have to disagree… However it is so rewarding to turn ” non believers” into ” Price Perfect Cuisine connoisseur”. My 4 out of town guests NONE of them wanted shrimp. They wanted me to create something heavier, more stick to your ribs. I’d had this meal in my mind and let them know it would be great. Well despite the initial ambivalence simply because it was ” shrimp” this entire platter was cleaned with EVERY single person going back for at least seconds.
Mealtime doesn’t have to derail fitness goals. All it takes is a little imagination, preparation and a willing palette. These ” tacos” were very well received. Instead of shells, used romaine lettuce. Saffron rice, sautéed beef, onions,fresh tomatoes, and skipped on the cheese.

……….and then this salad happened!! I created it on accident looking for things to compensate NOT using salad dressing. Well it was SO good I recreated it:) so filling, healthy AND delicious ! I didn’t make a resolution this year but a commitment to healthier options every day. This salad is making it easy!!! LOL.
Hibachi and ” hot dogs”???! I made dinner and its” hot dogs” , jasmine rice, fresh herbs , smoked Gouda and eggs!!! Absolutely incredible. Who says hot dogs have to be boiled in water, served on a bun or slathered down with condiments to taste good! Mr” I don’t eat hot dogs” ate ALL his food!
